(a) In liquid items the heat gets transferred by the convection method of heating. In this process, the hot molecules of the liquid become lighter and move upwards and cold particles get settled down at the bottom and begin to get hot. This is the reason the liquid should be warmed from below.
(b) Water has a higher heat capacity than soil and rock, so the oceantakes much longer to heat and to cool than the land. Coastal areas will generally have more moderate temperatures than inland areas because of the heat capacity of the ocean.
