The microorganism used to make the wine is yeast usually Saccharomyces cerevisiae . The wine is made from the fermentation of grape juices. During this process, ethyl alcohol or ethanol is formed and carbon dioxide is released as a by-product. Proper temperature should be maintained during fermentation (around 25 °C) as higher temperature can kill yeast.
It is a chemical change because it cannot be reversed.
