Honey gets its sweetness from the monosaccharides, fructose and glucose.

D-Fructose (levulose or fruit sugar) is the sweetest of all sugars. It is found in honey, corn syrup, and in the fruit and other parts of plants. It is much sweeter than sucrose (cane sugar).
