∙ The digestion of fats begins in the small intestine. Bile and pancreatic juice are released into the small intestine.
∙ The bile contains bile salts that act on the large fat globules and convert them into smaller droplets coated with bile salts. This process is called emulsification.
∙ After emulsification, pancreatic lipase breaks down the emulsified fat.
∙ Enzymes present in the intestinal juices breaks down fats into fatty acids and glycerol.
