How are fungi used in making ethyl alcohol, wine and beer?

Yeasts are the unicellular fungi which can reproduce either by budding or fission. Saccharomyces cerevisiae is the yeast which is generally employed in making alcoholic drinks. Ethyl alcohol, wine, beer are all produced by the process of fermentation. The reaction involves yeast reacting with glucose which leads to the production of ethyl alcohol and CO2.
