How can we change the pitch of different musical instruments?

Solution
Pitch of a sound is a characteristic of a sound that differentiates between a shrill sound and a flat sound.
In some musical instruments like the flute, the pitch of the sound can be changed by closing the holes of the flute so as to change the length of the vibrating air column.
This results in an increase of frequency resulting in a change of pitch.
Whenever you pluck a string of the sitar, it starts oscillating (vibrating) with a definite amplitude, and hence a sound is produced.
Since, Loudness is directly proportional to the square of the amplitude of a wave, It will produce a sound according to the amplitude.
When you hit the string with more energy by plucking it with more strength, that particular string will oscillate(vibrate) with more amplitude as compared thus producing a loud sound.
Since, The amplitude increases, the loudness of the sound also increases accordingly, and this will lead to a decrease in the pitch of the sound.
