Effect of Ethylene on Fruit ripening
In some climacteric plants like apples, bananas, tomatoes, etc., the growth of fruits is stimulated by ethylene. It fastens the ripening of the fruits. Ethylene causes a chain of reactions in the plants which leads to ripening.
Use of ethylene injections to promote ripening in fruits is not harmful to health as it does not reduce the nutrient value of the fruits. The only effect that is caused by ethylene is the change in aroma and characteristic flavor of the fruit. But even this effect is seen in some cases only.
