Two eyes are extremely useful for us in the following ways:
It expands our field of vision.
It helps us in depth-perception i.e. how far is an object from the eye.
It helps us in object identification (for example identifying your pencil box as one object).
The first point is a permanent advantage for a two-eyed person over a single-eyed person. However, our brain is extremely advanced and adapts to the environment quite well, given sufficient time. This allows even the person with a single-eye to gain the skills depth perception and object identification.
