  1. Unsaturated fats are susceptible to oxidation, the reason when it is exposed to heat or light oxidation starts.
  2. The deterioration of oils and fats in our food due to oxidation, leading to foul smell or taste is termed rancidity.
  3. There are several ways to protect food from getting rancid and one of those is keeping food cold i.e., refrigeration.
  4. Refrigerators slow down the process of oxidation and bacterial growth and hence prevent rancidity.
