The bacteria named as Lactobacillus are present in the milk. These bacteria, under warm temperature become active and convert milk into curd. These bacteria are inactive at low and very high temperature. Hence, milk do not get spoil during winters, in refrigerator and when heated.

According to the National Dairy Council, milk needs to be refrigerated and stored at a temperature between 35 and 40 degrees.The growth of bacteria get accelerated above this temperature and result in the conversion of milk into curd, thereby spoiling the milk.
