How does starter added in milk help it to set into curd?

Dear Student, The starter added to milk contains huge amount of Lactobacillus bacteria. Milk contains casein (a globular protein) in large amount. Due to reaction between Lactobacillus and casein Protein, curd is prepared. This reaction is possible due to formation of enzymes by Lactobacillus bacteria that partially coagulate the casein and hence curd is prepared. Regards
