How is insulation obtained from the heat of sun in a house through its roof?

A layer of mud and straw is laid over the roof of a house in between the concrete and brick tiles in hot countries. Because this layer does not conduct heat of sun rays through roof into the room of the house and thus helps to keep the room cool in summer.
