Baker's yeast contains numerous useful elements like carbohydrates, fats, proteins, vitamins and minerals.
Using yeast while baking breads causes the bread to rise thus expanding and helping it become lighter and softer by converting the fermentable sugars present in the dough into carbon dioxide and ethanol.
It gives a fluffy and spongy texture to the bread and contributes to the enhancement of the taste of bread.
During fermentation of sugar syrup, fruit juices, molasses etc. addition of yeast yields ethanol and is also known to add nutritive value to the products whenever added.
