The gastric glands in the stomach give out gastric juices which contain water, hydrochloric acid, and the enzyme pepsin. The hydrochloric acid is responsible for killing the germs which may have entered the body along with the food and it activates the enzyme pepsin. Pepsin converts proteins into a simpler compound called peptones.
