Water has a tendency to move from the area of its high concentration to the area of low concentration. In other words, water moves to the place having more solute concentraton. In the given scenario, the solution has a high concentration of solute(salt or sugar) so water moves out from the cell into the solution. This outward movement of water decreases the size of the cell and causes it to shrink.
