Starch is the polysaccharide of glucose. It has 2 structures- amylose and amylopectin. Amylose is a linear structure that includes alpha-D-glucose monomers linked together through alpha (1-4) glycosidic bonds. Amylose is a branched polymer in which many amylose-like chains of up to 30 glucose residues are linked through alpha (1-4) bonds, connected to one another through alpha (1-6) branch points.
