It is given that :Metal + Oxygen = Metal Oxide.So, Why notIron + Oxygen = Iron Oxide.Whereas,Iron + Oxygen + Water = Iron Oxide.

It is true that
Metal + Oxygen = Metal Oxide
Similarly
​Iron react with oxygen to form iron oxide on heating only.But in presence of water it form rust.
Iron + Oxygen + heating → Iron Oxide
But when water is also present with oxygen then the following reaction takes place to give hydrated form of iron oxide. This is called rusting of iron.

4 Fe + 3O 2 + 2xH 2 O → 2 Fe2O3 . xH2O
