Food preservation:

Food preservation involves the process by which spoilage of food is minimized by preventing growth of the microorganisms, increasing the self-life and preserving food for a long time.

Methods for food preservation:

  1. Preservation by common salt: Meat, fish, amla, raw mangoes, tamarind, etc. are preserved by common salt. Salt reduces the water content and thus it helps in controlling the growth of the microorganisms.
  2. Pasteurization: Pasteurization is referred to as a technique of partial sterilization applied usually to milk. In this process, packaged and non-packaged milk is heated with mild heat, i.e. 60℃- 70℃ for short duration, followed by rapid cooling to kill all the vegetative forms of pathogenic bacteria but not bacterial spores.
