Different species of bacteria are used in the production of different types of cheese. The species that are used in cheese industry are different from the one that secretes toxins and have a role in food poisoning. These organisms are used to improve the taste of the cheese. Also, they prevent the colonisation of some other types of bacteria and moulds.
List of types of cheese with the bacteria are as follows:
1. Cheddar cheese: Lactococci bacteria
2. Mozzarella cheese: Streptococci bacteria
3. Swiss cheese: Lactococci bacteria
4. Alpine cheese: Lactococci bacteria
5. Gouda cheese: Lactobacillus helveticus
