Fermentation:

  1. Fermentation is an anaerobic process in which energy is generated from glucose in the absence of oxygen.
  2. In lactic acid fermentation, yeast strains and bacteria transform starch or sugar into lactic acid in this process.
  3. During exercise, energy expenditure outpaces oxygen delivery to muscle cells.
  4. Lactic acid is produced, resulting in aching muscles. Pyruvate, the final result of glycolysis, is fermented into alcohol and carbon dioxide.
  5. Fermentation of acetic acid causes starch and sugar in grains and fruits to ferment producing vinegar and sauces. For example, apple cider vinegar.
  6. The enzymes invertase and zymase are produced by Saccharomyces cerevisiae and are responsible for the alcoholic fermentation of sucrose in which the final products are ethanol and CO2.
