Amylase:

  1. Amylase is an enzyme that breaks starch and glycogen into glucose and maltose.
  2. Amylase is present in both pancreatic juice and saliva.
  3. Salivary amylase (ptyalin) is found in saliva and breaks starch into maltose and dextrin.
  4. Pancreatic amylase converts amylose to yield dextrin, maltose, and finally into glucose.

A starch-digesting enzyme is amylase.
