  • Salivary glands: They secrete salivary amylase that breaks starch into maltose.
  • Gastric glands: The parietal cells of the gastric glands secrete HCl and hydrolyzes sucrose to some extent.
  • Pancreas: Secretes pancreatic juice that contains pancreatic amylase that breaks down polysaccharides into maltose and isomaltose.
In the stomach, HCl secreted by the parietal cells helps maintain the required acidic pH and in the small intestine bile juice secreted from the liver helps maintain an alkaline pH required for the enzymes in the intestine to act.
