  1. Baking of cake is a chemical change as during this process there occurs chemical changes in ingredients.
  2. To make the cake porous and light, baking powder is added to it.
  3. Baking powder is a leavening agent and is a combination of sodium hydrogen carbonate (NaHCO3) and an acid like tartaric acid or citric acid
  4. Sodium hydrogen carbonate is commonly known as baking soda.
  5. When NaHCO3 reacts with the acid part of the baking powder, it releases carbon dioxide which makes the cakes fluffy and soft.
  6. Hence, Baking powder is used to make the cake porous and light.
