Preservatives

  1. Food preservatives are natural or manmade compounds added to foods or medications to prevent spoiling caused by microbial growth or unwanted chemical changes.
  2. Benzoic Acid and Sodium benzoate are used as preservatives in fruit jams, jellies, and juices.
  3. The cell absorbs benzoic acid, which lowers the intracellular pH. Consequently, there is a decline in the anaerobic fermentation of glucose by phosphofructokinase. This prevents food-spoiling bacteria from surviving.
