Nature of solution form by mixing mustard oil and water

Dear student. Water being a polar molecule has dipole dipole interaction and hydrogen bonding between it's molecule.Wheras oil being a covalent molecule and involve hydrophobic interaction between it's molecule. Thus water and oil does not form a soluble mixture. And oil being lighter or having less density floats on the surface of water. So, when mustard oil and water are mixed, an emulsion is formed.
