Salivary glands secrets the salivary alpha-amylase/ptyalin and pancreatic gland secrets the pancreatic amylase.
Amylase breaks down the starch in to the alpha-dextrin, which are further digested to the maltose and maltotriose by the gluco-amylase. These products are then hydrolysed to their corresponding monosaccharides.
