During evaporation in a liquid, molecules with high kinetic energy from the surface escape the liquid phase and enter into gaseous phase. This results in lowering the kinetic energy from the liquid as only molecules with lower kinetic energy are left behind. Since we know that the average kinetic energy of a system is proportional to its thermodynamic temperature, the temperature of the liquid decreases. This produces the cooling effect during evaporation.
