The protective tissues in plants are:

Epidermis: This tissue is usually present as the outer layer of the plant body lining the roots, stem and leaves. These are flattened cells with the upper and lower surfaces parallel to each other. It is one cell thick, covered with cutin and protects the underlying tissue.

Cork: As the stem and roots grow and get mature the outermost layer forms the cork. Cork cells are dead, with no intercellular spaces and suberin deposited on their surface. They prevent loss of water.
