1. How will it affect the taste of the cake and why?

1) The cake will taste bitter due to baking soda (chemically sodium bicarbonate or sodium hydrogen carbonate). Sodium bicarbonate is basically a mild base, and we know that bases are bitter to taste. Baking soda will give soft and spongy texture to the cake, but will also impart a bitter taste. In baking powder, the tartaric acid neutralizes the bitterness produced by baking soda.

2) Baking powder is basically a mixture of baking soda, tartaric acid and starch. Hence, baking soda can be converted into baking powder by mixing it with starch and tartaric acid in the right proportion.
