How is transport of water in xylem tissue different from translocation of food in phloem tissue

Transport of water by xylem tissue always takes place in upward direction from roots to tip. But translocation of food by phloem takes place in different directions to the various parts of the plant body from leaf. Xylem transports water and mineral salts whereas phloem transports sugar and amino acids.
