in this chapter it says that humans are also omnivores so what about the people who are vegetarians?

Humans are omnivores. They eat both plants and flesh of some animals.They have adaptaive features to eat and digest both types of food. People who do not eat non vegetarian foods such as meat, do so as matter of their choice. They can eat non vegetarian food when have desires and available conditions to eat it. So, overall humans are omnivores. As such carnivores, herbivores and omnivores terms are provided to particular groups, not considering about any particular member choices.
