It is beacuse excess creates water conditions in which roots do not get proper oxygen and start respiring anaerobically. Anaerobic respiration leads to production of toxic end product such as alcohol. Roots soon loses their permeability to water, retarding uptake of minerals. Internal water shortage leads to closure of stomata, depressed rate of photosynthesis and translocation of organic compound. Hence, plants die when watered excessively.
