protoplasm is defined as cytoplasm along with the cell organelles and also defined is protoplasm = cytoplasm + nucleus.so why we only consider nucleus.? why not the other organelles such as mitochondria.?

All the cell organelles like mitochondria, chloroplast etc. are present in cytoplasm. Definition of proplasm was given when these organelles were unknown, only nucleus inside the cell was known. Later, these organelles were found outside nucleus and inside cell membrane, so were included in cytoplasmic part.
