Rancidity is the chemical decomposition of fats, oils and other lipids. It is the property of a fat that is stale, smells bad and is discolored. Any fatty food can go rancid. Oxidation, irradiation, heat are some of the major causes that induces fat to go rancid. It is found in cooking oils, ghee, deep-fried foods etc.
