It is because Aluminium being more reactive prevents Iron from reacting with atmospheric oxygen and hence reacts itself with the oxygen to form aluminium oxide (Al₂O₃) layer on it.Therefore these layer covers the iron particles from undergoing corrosion or rusting.
Linseed oil is used a binder in paints.
