(a) Sodium bicarbonate is used as baking soda. It acts a leavening agent, which means it reacts with acidic components in batters, releasing carbon dioxide, which causes expansion (rise) of the batter and forms the characteristic texture and grain in pancakes, cakes, quick breads, soda bread, and other baked and fried foods.

(b) Sodium chloride is used as a preservative in pickles, meat and fish. It preserves pickles by anaerobic fermentation producing lactic acid. Lactic acid preserves the pickles and gives them their characteristic flavour. The salt concentration is very important in this process. This is used as a way to preserve food for out-of-season use and for long journeys.
