What are the physical and chemical changes which take place in making curd from milk?
Physical change in making curd : The smell of curd is different from that of milk. The state curd is not pure liquid.
Chemical changes in making curd: The bacteria Lactobacillus is added to milk to convert it into curd. The bacteria breakdown the lactose of milk to lactic acid. This increases the acidity of milk due to which the milk protein casein coagulates as curd.
The chemical reaction involved is:
C12H22O11 (lactose) + H2O (water) → 4 CH3CHOHCOOH (lactic acid)
