Centrifugation is a process of separating components of a mixture by agitating the mixture manually or by using a spinning motor. In this process the lighter particles are collected at the top while the heavier particles settle at the bottom. This technique is used to separate butter and cream from milk (colloid). Milk is agitated at a speed as a result of which cream is separated and floats over the skimmed milk.
