Oxidation of food means when the chemicals present in food is exposed to oxygen and get oxidised. It is a destructive process as it leads to loss in nutritional value and changes in composition of food.

Smoking of food: It is a method of food preservation. In this method food is exposed to smoke and cooked in smoke filled environment.
