Distillation is the process in which the components of a substance or liquid mixture are separated by heating it to a certain temperature and condensing the resulting vapors.

Distillation is a powerful tool, both for the identification and the purification of organic compounds. Distillation is used to purify a compound by separating it from a non-volatile or less-volatile material. When different compounds in a mixture have different boiling points, they separate into individual components when the mixture is carefully distilled.

We usually require apparatus for distilling mixtures to get pure components. But we can build relatively inefficient distiller at home. Avoid steam produced in this activity as it may cause steam burns.

Step 1 Fill a cooking pot with water to a dept of about 1 cm. Add food colouring or some salt or both.

Step 2 Place a heavy ceramic coffee mug in the centre of the pot. The height of the mug should be at least an inch less than the height of the pot.

Step 3 Lay plastic wrap loosely across the top of the pot and secure it with a rubber band. The seal should not be air tight—leave two of the edges open to prevent a building up of pressure. Trim away excess plastic wrap. Place an ice cube at the centre.

Step 4 Turn the burner on low to bring the water to a low boil. Look for signs of cloud formation below the ice cube. The boiling water may jostle the mug.

Step 5 Turn off the heat. Remove the melted ice with a sponge. The water vapour will travel round the floating coffee mug and condenses on the cold (ice placed) plastic wrap. As the plastic wrap is slightly rounded the condensed vapour will run down the underside of the plastic wrap and drip into the floating coffee mug. The coffee mug is the collector for 'distilled' water.
