Pepsinogen is an inactive enzyme released by the gastric glands. It is converted to an active hormone called pepsin in the presence of hydrochloric acid. The main function of pepsin is digestion of proteins.
Carbohydrates are digested by enzymatic action. It begins with salivary amylase in the saliva which breaks down sugar into amylase. It is then continued in the small intestine where maltase , isomaltase, sucrase and lactase act to give monosaccharide called glucose or fructose
