What is the exact reason for when water is poured into boiling hot oil a fire starts?

Dear student!

Water and oil do not mix with each other as water is more dense than oil. When we pour water in the hot oil , it wants to sink but due to the hot oil contact it suddenly converts to steam and there occurs an instantaneous phase change from liquid to a gaseous state. Thus, there occurs a tremendous expansion the steam water just go below the oil during this phase conversion and it expands faster in upward direction which atomizes oil particles and explosively the oil gets flame.
