Electrodes are used in electrolysis to make contact with non metallic part of a circuit. Thus an electrode should be a good conductor of electricity and provide minimum resistivity.
Copper is a material which has small resistivity and large conductivity because even a small electric field pulls a lot of current through it. Thus copper electrodes are used in electrolysis.
