Plants have different colours due to pigments produced by plants. These pigments include chlorophyll, carotenoids, anthocyanin etc. which impart different colour to the plants. Smell of the plants is due to chemicals produced by plants to attract pollinators such as insects for pollination. They do so in particular time and season when needed such as during flowering. Because of these, smell varies from time to time. Change in plant colour is due to either degradation of pigments or the pigments are less synthesised.
