Question

why does dough used for baking bread and cake rise when kept overnight

Open in App
Solution

The dough prepared for for baking bread and cake rises when kept overnight because of the production of carbon dioxide gas in it. This gas is produced as a byproduct of process of fermentation (anaerobic respiration/respiration in absence of oxygen). The fermentation process breaks down starches in dough into acid or alcohol along with release of carbon dioxide.
