why the oesophagus of animals which eat meat is smaller than the animals which eat plants?

There is no big difference in the length of oesophagus of plant and flesh eating animals. The main difference lies in the gastro intestinal tract. The plant eating animals have 4 chambers in its stomach and large sized intestine in order to digest cellulose. However , meat eating animals have a stomach and normal sized intestine as their main food component is protein which is easily digestible.
