Preparation of Mango Pickle:
1. Get green mangoes.
2. Wash them in water.
3. Cut into pieces. Then the pieces are dried for some days in the sun.
4. Various species such as salt, mustard oil, roasted fenugreek and nigella, and red chili powder are mixed with the pieces of mangoes.
Note: Salt acts as a preservative in vegetable pickles.
5. The mixture is kept in a big flat pot in the sun for some days, till the slice turn pale yellow.
6. Pack the pickle in a glass jar and covered it with a thin layer of mustard oil. The pickle will be ready in 2-3 weeks.
