Potato tubers are underground stem modifications that store starch.
The special organelles called plastids are present in plants for different functions such as photosynthesis, storage of food, and imparting colours to flowers and fruits.
Of the three plastids, chloroplast contains green pigments. Leucoplasts are for storage. Chromoplast contains coloring pigments for flowers and fruits.
When potato tubers are exposed to light, leucoplasts are converted into chloroplasts, hence showing green colour.
