Protein denaturation is caused by disruption of three dimensional configuration like secondary and tertiary structure. The secondary structure of the protein has alpha helix and beta helix which has intermolecular hydrogen bond which gets destabilized on heating.
The tertiary structure is the three dimensional conformation of proteins. The folded peptide chain are stabilized by chemical bonds. Hydrogen bond, ionic bond, disulphide linkage and hydrophobic interaction stabilizes the structure.
At high temperature, hydrogen bond, sulfide bonds, ionic bond breaks and leads to the disruption of structure.
