S + O2 → SO2
In the above reaction oxygen is written as O2 because it is diatomic.
But why sulphur is written as S not S8 because atomicity of sulphur is 8?

Sulphur is a element and exits in its pure form as this only.

The molecule of oxygen is O2 because it takes 2 O atoms to make a molecule of oxygen. These types of elements are called diatomic elements, because the element exists in its pure form as a molecule composed of 2 atoms of the element.
